Festive Cashew Nut Roast by JustIngredients

Don’t get us wrong, nothing says festive like turkey, but why miss the chance to try something excitingly different this Christmas? After all, it only comes round once a year!

15g Butter
1 Tsp Olive Oil

1 Large White Onion
300g Cashew Nuts – 200g Ground fine, 100g chopped fine
150g Fresh White Breadcrumbs
2 Medium Eggs, Beaten
¼ Teaspoon Dried Sage
Good Shake of Ground Allspice
Salt & Ground White Pepper to season
Soya Milk, to moisten if mixture too dry




  1. First pre-heat your oven to 180°C/360°F/Gas Mark 4 and grease and line a 450g (1lb) loaf tin. Then take a large pan and place the butter and olive oil on a low light until the butter is melted and mixed with the oil. Add the chopped onion and cook on a low light until the onions are translucent.
  2. Tip the onions in to a bowl and add the nuts, sage, allspice, breadcrumbs, salt, pepper and stir to combine, mix in the eggs and make sure that everything is easily combined. If the mixture is too dry add a little milk or soya milk to moisten it.
  3. Put the nut roast mix in to your greased loaf tin, pressing it down and levelling it off, bake in your pre-heated oven for 40-50 minutes, check towards the end of the cooking time to make sure that the nut roast isn’t getting too brown. Slice and serve with all the trimmings.
