Christmas Turkey by Farmers Choice

  1. Allow the meat to settle at room temperature for approximately 2 hours.
  2. Pre-heat your oven to 180ºC/355ºF (or 160ºC for a fan assisted oven).
  3. Place the turkey in a large roasting tin upside down. This allows the juices to run into the breast of the turkey, keeping it moist. There is no need to cover it with foil.
  4. Roast the turkey for: 3.5kg 105 mins, 4.5kg 120 mins, 5.5kg 135mins, 6.5kg 150 mins, 7.5kg 165 mins, 8.5kg 180 mins, 9.5kig 195 mins.
  5. Half an hour before the end, turn the turkey over to allow the breast skin to brown and add salt and pepper.
  6. Check the dish every 10 minutes until it reaches 72ºC or until the juices run clear
  7. Once cooked, allow the meat to rest for 15 to 60 minutes.
  8. Whilst it is resting, pour the juices into a saucepan and allow to cool, skim the fat off the top and when ready to eat, simply reheat it and stir in 2 tablespoons of flour to thicken, if required, for a delicious gravy.
