Shemin’s Chickpea,Potato and Spinach Curry

This curry is delicious, healthy and easy to make. It will be a family favourite in no time!

Serves: 4

You will need

1 Large onion or 2 medium onions

1 tbsp Oil

100g Shemin’s Curry Paste

¾  Can chopped tomatoes

550g Potatoes

1 tin Chickpeas

4 tbsp Coconut’milk’

1 bag Spinach

1 tbsp Lemon juice


Method

1. Cut the potatoes into cubes and parboil, put aside for step 5.

  1. Fry onions until golden brown.
  1. Add Shemin’s Curry Paste and chopped tomatoes.
  1. Cook gently for approx. 10 – 15 mins on a medium heat until the tomatoes have broken down, add a little water if the sauce gets too dry.
  2. Add potatoes and chickpeas and just a little water and let the potatoes cook until tender.
  1. Add coconut milk.
  1. Add a pinch of salt and lemon juice.
  1. Stir in the spinach.
  1. Serve with naan bread or rice
